RECIPE 4: Beavertails | SIERRA 🦫

INGREDIENTS
Dough
* 2 teaspoons instant yeast
* 3/4 cup water, lukewarm
* 1/2 cup whole milk, lukewarm
* 1 tablespoon white sugar
* 1 teaspoon salt
* 3 cups all-purpose flour
* 1 tablespoon unsalted butter, melted
* vegetable oil for frying
Maple glaze topping
* 4 tablespoons unsalted butter, browned
* 1 teaspoon vanilla extract
* 3 tablespoons maple syrup
* 1/2 cup powdered sugar
Triple trip topping
* nutella
* peanut butter
* reese’s pieces
Cinnamon sugar topping
* sugar
* cinnamon powder

RECIPE
Make the dough
1. To a large mixing bowl, add the warm water and milk. Sprinkle the instant yeast on top. Whisk together.
2. In the same mixing bowl, add the sugar, all-purpose flour, and salt.
3. Using a stand mixer fitted with the hook attachment, mix until the dough comes together and then knead for 1 minute until soft and elastic. It shouldn’t be too sticky or too dry.
4. Oil a bowl with butter and transfer the dough. Cover it with saran wrap and then a towel. Place in a warm place until double in size, about 1 hour.
Make the maple glaze
1. Start by browning the butter.
2. To a pan over medium heat, add the butter. Cook for 5 to 6 minutes until it starts to bubble and then brown. Make sure not to cook it any further or it can burn. Transfer it to a bowl.
3. In the same bowl, add vanilla extract, maple syrup, and powdered sugar. Combine together until smooth. Set aside.
Frying and assembling
1. Once the dough has doubled in size, divide into 6 to 7 equal sections and roll into balls. Oil your hands as necessary to prevent any sticking. You can also use flour but I prefer oil.
2. Flatten each section into a long oval shape that is fairly thin.
3. Heat 1 inch of vegetable oil in a frying pan to 350°F.
4. Once the oil is hot, add in the dough and fry 1 at a time or 2 if you have a large pan. Cook on one side until golden and bubbly and then flip over and let the other side get golden.
5. Transfer to a wire rack to let any excess oil drip off. Repeat with the rest of the dough.
6. After frying, brush the topping of your choice on the top of the fried dough!
