RECIPE 7: Vegetarian Kurniki | EMILIA 🥔

INGREDIENTS 

Dough
200g margarine
250ml milk
1 egg
1 tsp salt
Lemon juice
½ tsp baking soda
5 glasses of flour

Filing
3 good-quality potatoes
2 large onions
100g butter
1 tsp salt
1 tsp ground black pepper

Place 200 grams of flour in a bowl and add 200 grams of margarine (do not melt!). Mix the margarine with flour using a fork until very tender and all margarine is smooth.

Add the egg to the bowl.

Put tsp of salt into the milk, mix and then add to the bowl.

Squeeze lemon over the ½ tsp of baking soda so that the baking soda is quenched, then add to the bowl.

Mix all with fork.

Add more flour little by little so the dough doesn’t get too hard (around 105 200-gram cups of flour, allowing for a little bit left over).

Once the dough has thickened, remove it from the bowl and knead it. You’re looking for a soft, airy consistency.
Place it in a plastic bag and refrigerate it for an hour.

Let it rest.

Prepare the filling - chop the potatoes and onions into small cubes, add a teaspoon of pepper, two teaspoons of salt, and 100g melted butter. Mix everything well.
Once dough has rested, divide both the dough and the filling into four parts.

Roll the dough into a sausage shape and cut it into small pieces. Roll it in flour and then roll it out until 15-17 centimeters diameter.

Roll out the edges well and spread them out.
Add the filling to the centre - enough that the dough isn’t stretched and the bottom doesn’t tear.

Fold the dough over the filling (watch video for technique)

Place in the oven for 45 minutes.

Eat!!
